Christmas Cake


3 eggs

5 Tablespoons sugar

200 gr hazelnuts – coarsely chopped

200 gr red and green cherries – cut

200 gr raisins

7 Tablespoons flour

2 Tablespoons sweetened lemon concentrate


  1. Mix all ingredients, adding fruit and nuts last.
  2. Bake about 1 hour in lowish oven, in greased and floured small loaf tin.
  3. Keep frozen, and slice very thinly before serving.
