Lentil Soup (3-4 servings)


2 Tablespoons olive oil

2 large onions – chopped

2 stalks celery – chopped

2 large cloves garlic – finely chopped

1 cup green lentils

1 bay leaf

lemon juice

salt, pepper

1 Tablespoon soy sauce

5 cups water (or more if necessary)


  1. Heat oil and lightly fry onions, garlic, and celery.
  2. Add water, and bring to boil.
  3. Add lentils.  Cover and cook 45 minutes.
  4. Add salt, pepper, and bay leaf.
  5. Cook 30-45 minutes – till lentils cooked.
  6. Stir in soy sauce and lemon juice.  Remove bay leaf.
  7. Blender if desired.
