Minestrone Soup

Ingredients:

2-3 cups beans – soaked in cold water overnight

2-3 Tablespoons oil

4-5 carrots – diced

500 gr frozen peas

1 clove garlic – crushed

1 small tin tomato puree

handful spaghetti

2 onions – chopped

2 potatoes – diced

1 large tomato – peeled and chopped

1/2 cabbage – finely shredded

4 chicken or vegetable cubes

1 teaspoon salt

1/2 teaspoon pepper

water to cover

Optional:

2-3 slices shin, marrow bones

Method:

  1. Heat oil in large saucepan.  Add onions, garlic, and cabbage, and fry till limp.
  2. Add remaining vegetables excepting for potatoes and spaghetti.
  3. Add meat and bones.
  4. Three-quarter fill pot with water.  Cover and cook over gentle heat 2-3 hours.
  5. Add tomato puree, seasoning, potatoes and spaghetti, and cook another hour or two.
