Mom's Easy Barbecue Chickpea Casserole


4 cups cooked or canned chickpeas

3/4 large can crushed tomatoes

3-4 Tablespoons maple syrup or honey

1 medium onion – chopped

1 teaspoon prepared mustard

1/2 teaspoon cayenne pepper

Freshly ground black pepper


  1. Mix all ingredients well, and pile onto oiled casserole dish.
  2. Cover and bake 1 hour in mod-hot oven, uncovering for a few minutes at the end.
