Spanish Goulash


1 kg lean beef – cut in 2″ squares

1/2 cup flour

1/4 teaspoon salt

black pepper

2 Tablespoons oil

4 onions – chopped

1 clove garlic – chopped

2 Tablespoons pearl barley

4 large prunes – cut up

2 bay leaves

1 teaspoon paprika

4 cups red wine

4 tomatoes – quartered


  1. Shake meat vigorously in plastic bag with flour, salt and pepper.
  2. heat oi,l and brown onions and garlic.  Add meat and brown lightly.
  3. In casserole (with tight cover), place one layer meat, uncooked barley, meat, prunes, tomatoes, and bay leaves.  Sprinkle with paprika and pour over wine.
  4. Cook 20 minutes in high-ish oven, then 45 minutes in slow oven (200 degrees C) (the longer the better), adding a little water if necessary.
