Aharoni’s Lemon Chicken

Ingredients:

1 medium onion

500 gr chicken breasts

1 unblemished lemon

Sauce:

1.5 cups clear soup

juice of 2 lemons

6 Tablespoons sugar

2 Tablespoons soy sauce

4 Tablespoons dry white wine

Marinade:

2 egg whites

2 Tablespoons cornflour

2 Tablespoons dry white wine

pinch salt, pepper

Thickening:

2 Tablespoons cornflour, dissolved in 4 Tablespoons water

Garnishing:

1 spring onion – chopped

Method:

  1. Peel onion, halve, and slice thinly.
  2. Wash lemon, halve lengthwise, and slice thinly – with peel.
  3. Cut chicken into 2 cm cubes.
  4. Mix marinade and leave chicken to marinade 30 minutes.
  5. In separate bowl, mix ingredients for sauce.
  6. Heat oil.  When very hot, stir-fry chicken till white.
  7. Add onion and lemon slices, and stir-fry a further minute.
  8. Add sauce, and stir lightly.  When comes to boil, add cornflour mixed with water (thickeniong), boil, and pour into serving bown.
  9. Garnish with spring onion.
