Mom’s Jamaican Chicken


1 oven-ready chicken

2 teaspoon soy sauce

1 teaspoon ground ginger

1 onion

To Baste:

1 Tablespoon soy sauce

1 teaspoon ground ginger

4 Tablespoons honey


  1. Brush chicken inside an dout with soy sauce, and leave to dry in cool place.
  2. Sprinkle with ginger.  Peel onion, and place inside chicken.
  3. Coat chicken with basting liquor, and bake on one side in moderate oven
  4. After 1/2 hour, repeat basting,a nd turn chicken.
  5. Keep basting and turning till chicken deep brown.
