Mom’s Milchike


80 gr yeast (4 heaped Tablespoons)

200 gr butter – nicely melted

1 kg flour (plus more as needed)

12 teaspoons sugar

4 eggs

1.5 teaspoons salt

1.5 cups milk


  1. In micro, warm yeast with 1 of the teaspoons sugar to reoom temperature.
  2. Place flour in bowl and make well in center.
  3. Into well, put yeast, eggs, melted butter, salt, sugar and milk, and mix very well to smooth dough.  Must be pliable – not sticky and not hard.  Knead very well, and add flour if necessary.
  4. Form ball, cover with towl and let rise about 5-6 hours.
  5. Knead very well again.  Flatten (quite thick!) and spread with cinnamon and sugar.
  6. Roll up (rollada) and slice.  Lay slices flat on baking sheet, leaving room for rising.
  7. Cover and leave to rise again about 3/4 hour.
  8. Paint with beaten egg, and bake in moderate oven till nicely brown.
