Mrs. Hemi’s Pilau

Ingredients:

1 chicken – portioned (save skin and fat)

1/2 cup prepared small red beans – drained

about 1 kg pumpkin – cut in 2 cm slices

400 gr rice – soaked 2 hours in salt water, washed and drained

handful dill

1 pkt raisins (100 gr)

1/2 teaspoon cinnamon

salt, turmeric, pepper

Method:

  1. Heat 6 Tablespoons oil in very big pot.  Add skin and fat, stirring continuously.
  2. Add chicken and 3/4 teaspoon pepper.  Working over high flame, cook till tender, turning occasionally.
  3. Remove chicken from pot, and discard skin.
  4. Remove 1/2 cup oil from pot, and keep aside.
  5. Arrange pumpkin on bottom of pot.
  6. In another pot with water, boil rice, 1/2 teaspoon salt, 1.5 teaspoon turmeric, and beans.  Drain and wash in cold water.  Stir with fork, and leave to drain.
  7. Cook pumpkin tol SOFTISH, then add layer rice, dill, chicken, rice, dill, rice.
  8. Sprinkle with remaining oil from chicken.  Cover, and cook over low heat.  Stir rice with fork occasionally, without moving chicken or pumpkin.
  9. Add 1/2 teaspoon cinnamon, stir, and sprinkle with raisins.
  10. Cook on very low flame till ready.
